Slow Cooker BBQ Beer Beef n Cheese Wraps

This turned out to be a very flavorful dish and made enough meat to save for left overs! I used agave syrup but you could substitute brown sugar if you wish. This came out so good I can't wait to make it again! Please try it and let me know what you think. NOTE: The rice in this recipe gets kind of mushy and blends in with the meat as kind of a filler. If you don't like your rice this way then I suggest taking some of the liquid out of the crock pot to cook your rice with on the stove. But really, it was good cooked in the crock pot, just not your usual rice. :) 2-3 lb. London broil 1 tablespoon olive oil 1 packet Lipton onion soup mix 1 tsp. minced garlic 1 tsp. chili powder 1 8 oz. can tomato sauce 1/4 cup. agave syrup 1 can beer (I used Pabst beer) 2/3 cup rice uncooked ------------------------- 8 tortillas shredded cheese ------------------------- 1/4 cup ranch dressing 1/2 cup sour cream Coat crock pot with oil, add London broil and dump everything

Chipotle Bacon Lentil Tacos

This recipe is a somewhat different take on tacos, but I didn't know what to call them so here it is! These 'tacos' are an easy, super healthy dinner and they were a huge hit at my house tonight!  I'm so happy when my kids gobble up their dinners - and it's somewhat healthy food! Yay! :)  Now. I could've made this vegetarian but I decided at the last minute to add a little turkey bacon. I had some in the freezer that I needed to use up so thought, why not! Bacon makes everything taste better.... Here's the ingredient list: 8 multi-grain medium size tortillas ( I used Fresh & Easy 100 calorie multigrain tortillas) 2 tablespoons olive oil 1/2 cup lentils, uncooked, cleaned 1/2 cup rice, uncooked 2 cups water 1 cup chicken broth 1-2 tablespoons taco seasoning 1 cup fresh spinach 1 cup frozen corn 1/2 cup salsa 6 oz (1/2 package) turkey bacon 1 cup low fat Mexican blend cheese sour cream chipotle sauce In medium sauce pan add water

CrockPot Baked Potatoes Topped with Chili and Cheese

Cheap. Easy. Kids love it! Did you know you can bake potatoes in a slow cooker?? It works great! Just spray the inside of your crock pot, scrub potatoes clean and put inside crockpot. If you want spray potatoes lightly and sprinkle with salt. Cook on low for about 8 hours, or high for about 5 hours. 6 Russet potatoes Toppings: canned low fat turkey chili with beans shredded cheese sour cream salsa ...whatever toppings you like on your potatoes! To serve: I cut the potatoes into bite size pieces then topped with toppings. Everyone loved this, it's filling, high in fiber and it's delicious!

Cheesy Beer Bread Pizza Muffins

These were so SO good!! My family ate them ALL - no left overs with these! The bread was soft and so delicious. Please try this and let me know what you think! Cheesy Beer Bread: 1 Cup cheddar cheese 3/4 Cup cottage cheese 1 Cup beer 2 eggs beaten 2 Cups flour 1/4 Cup sugar 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt Preheat oven to 375 degrees. Spray a 12 muffin tin. Mix first 4 ingredients in large bowl.  In separate bowl mix dry ingredients then add liquid ingredients, mix well. Set aside. Filling: Left over cooked 1/2 lb. ground mild pork sausage and 1/2 lb. cooked ground low fat turkey. (Last week 1 fried up 1 lb of ground pork sausage and 1 lb of ground turkey - used half for a lasagna and froze the other half of the meat.) 1 can fire roasted diced tomatoes, drained well 1/4 tsp. garlic powder 1/4 Cup mozzarella cheese 1/4 Cup cheddar cheese Mix the garlic with the tomatoes. Drop about a tablespoon of the bread dough into greased muffin tins.

Bacon Egg Cottage Cheese Casserole

Thank you Martha Stewart for this recipe, I adapted it to my liking and it turned out AWESOME! Served it for brunch with some friends and they all loved it. This is super easy, I prepared it the night before and baked it the next morning. 5 English muffins, split, toasted, and cut in half package of turkey bacon cooked and cut into bite size pieces 1 1/2 cups cheddar cheese 8 large eggs 1/2 cups low fat milk 1 cup low fat cottage cheese 1 1/2 tablespoons Dijon mustard Coarse salt and ground pepper Dash of Paprika Optional additions: sauted mushrooms grilled onions sauted spinach Spray a 2-quart shallow baking dish (oval or square); set aside. In dish, alternately arrange, cut side down, muffin halves and bacon. Sprinkle with cheddarcheese. Set aside. Chicken Alfredo with Beans and Fire Roasted Red Peppers

I made this last night for a quick and easy dinner and everyone loved it! My 11 year old son had 3 servings! 8 oz. spaghetti pasta 1 Cup cooked chicken 1 jar fire roasted red bell peppers, drained and chopped 1 can red kidney beans, drained 1 jar Bertolli Alfredo Sauce Cook pasta until al dente & drain.  In microwave heat remaining ingredients. Combine sauce mix with pasta and serve! This dinner easily serves 4 - 5. If you serve a salad or french bread with it you could probably serve 6 people.
